This meal can be ready in less than 40 minutes. Some people add also tomato paste, but I don’t recommended, I like it white, as tomato paste makes the food more acidic. Serve with feta cheese and some olives.
Greek Spanakorizo Best Recipe:
•1 cup of olive oil.
•1kg fresh spinach.
•1 large onion, minced.
•6 spring onions (finely chopped)
•Zest from half lemon (optional).
•1 tbsp dried Greek oregano.
•1/2 bunch dill (chopped).
•5 handfuls of white rice (It depence how many portions you want to do).
•Salt and Pepper.
•Fresh juice of 1 lemon.
In a pot add the olive oil and saute the spring and the large onions.
If using fresh spinach carefully wash it and when it is dry chop it and put it also in the pot together with dill until browned. Add salt and pepper, add some water and put the rice!
I steam the rice first, as it is healthier and faster, but if you don’t have a steamer just pout in on the pot, for at least for 25 minutes! In the end add the fresh lemon juice.
