Gemista stuffed vegetables is one of the most delicious plates of Greece. Every house in Greece has gemista once a week.
Gemista Best Recipe: Greek Stuffed Tomatoes and Peppers
- 4 Large tomatoes.
- 4 Zucchini.
- 4 Green peppers.
- 1 Bunch parsley.
- 8 Cups of brown or white rice.
- Salt and Pepper.
- Olive oil.
- 5 Potatoes.
- 2-3 Ripe tomatoes / or juicy tomato.
- 1 Onion.
- 1 Clove garlic.
- Little pine if available.
Wash all vegetables and the rice. Slice the top of the tomatoes / peppers / Zucchinis that we have to fill. Remove the vegetables flesh with a spoon to create a hole. Keep the content of the tomatoes and the Zucchinis in a bowl, reserve for later and pour a little salt.
Prepare the filling:
Fry in a pan the chopped onions and garlic and 1 cup of oil. Add the rice, the parsley and the pine nuts. Pour some Salt and pepper and finaly add the chopped tomatoes and the Zucchinis that we kept in the bowl. Carefully fill vegetables.
Do not fill to the brim, so they not leak when baking. Cut the potatoes and put them also in the pan. Add 2-3 ripe strainer tomato (or tomato juice) over the pan to spread everywhere. Finaly Cook the food in a preheated oven at 200C for 1 hour.
